My gf's church requires you to accept Jesus as your personal savior before you can be baptized what if I can't?

You really need spiritual counseling. What you have said, you really don't have a personal relationship with Jesus, nor do you want one. Therefore, there is no sense in being baptized. It will do nothing for you except get you wet. Baptism is a statement of faith that says that you have decided to follow Jesus and all His ways. Until you have a change of heart and truly repent, you should hold off on being baptized.
